Inside view of the Mill
with one of its grinding stones
|
|
A channel
wheel driven by a waterfall helps to activate the entire mechanism.
Walnuts, hazelnuts
and almonds are crushed under a grinding stone. A paste is
thus obtained, which is mixed and heated by a wood fire as
in the olden days, at a moderate temperature, in a cast iron
caldron. Then it is pressed, filtered, decanted and packed
without using any additive or preservative.
